The beef itself was pretty amazing--the tenderness and mouthfeel of a fine o-toro. My first trip to the restaurant, Morimoto was there, and came to our table to make sure everything was just-so. Perhaps my favorite dish was a semi-deconstructed o-toro maki that came to the table in a rectangular bamboo mold, and several squeeze bulbs of carefully constructed sauces in bright oranges, yellows, and greens.
